Ingredients:
2 chicken thighs (skinless, boneless)
1 cup fresh spinach
1 cup sliced mushrooms
1 tbsp olive oil
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
Fresh parsley (for garnish)
Directions:
Season the chicken thighs with salt, pepper, garlic powder, and onion powder.
Heat a non-stick skillet over medium heat and add the olive oil.
Once hot, place the chicken thighs in the skillet and cook for 5-7 minutes per side until they reach an internal temperature of 165°F (75°C).
While the chicken is cooking, add the sliced mushrooms to a separate pan with a small amount of olive oil. Sauté for 4-5 minutes until tender and golden.
Add the spinach to the mushrooms and cook until wilted, about 2 minutes. Season with a pinch of salt and pepper.
Serve the chicken thighs with the sautéed spinach and mushrooms on the side. Garnish with fresh parsley for a pop of color and extra flavor.
