Ingredients:
2 lbs potatoes, thinly sliced
2 tbsp butter
2 large onions, thinly sliced
2 cloves garlic, minced
1 cup heavy cream
1 cup whole milk
1 ½ cups Gruyère cheese, shredded
½ tsp salt
¼ tsp black pepper
½ tsp fresh thyme leaves
Directions:
Preheat oven to 375°F (190°C). Grease a baking dish.
In a skillet, melt butter over medium heat. Add onions and cook slowly until caramelized (about 20 minutes). Stir in garlic and cook 1 minute more.
In a saucepan, combine cream and milk; warm gently without boiling.
Arrange half the potato slices in the baking dish. Season with salt, pepper, and thyme. Spread half the caramelized onions over them, then sprinkle with half the Gruyère.
Repeat layers with remaining potatoes, onions, and cheese. Pour warm cream mixture over top.
Cover with foil and bake 40 minutes. Remove foil and bake another 20–25 minutes until golden and bubbly.
Let rest 10 minutes before serving.
