Easy Zucchini Beef Skillet




A healthy, quick, and flavorful one-pan dinner packed with protein, fresh zucchini, and savory spices. Perfect for busy weeknights!


☑️Ingredients:

1.5 lbs (680 g) grass-fed ground beef

3–4 cloves fresh garlic, minced

1 medium yellow onion, diced

2 medium zucchinis, halved lengthwise and sliced into half-moons

1 red bell pepper, diced (optional for extra color & flavor)

1 can (14.5 oz / 410 g) diced tomatoes, drained

1 teaspoon Italian seasoning (or oregano + basil mix)

½ teaspoon paprika

½ teaspoon chili flakes (optional, for spice)

Salt and black pepper, to taste

2 tablespoons olive oil (or avocado oil)

Fresh parsley or cilantro, chopped (for garnish)

Shredded cheese (optional topping)

☑️Instructions:

1. Cook the Beef

Heat a large skillet over medium-high heat.

Add the ground beef and cook, breaking it apart with a spoon, until browned (about 6–8 minutes).

Drain excess fat if needed.

2. Add Onion & Garlic

Stir in the diced onion and minced garlic.

Cook for 2–3 minutes until fragrant and softened.

3. Add Vegetables

Add zucchini and bell pepper to the skillet.

Sauté for 5–7 minutes until the vegetables are tender but not mushy.

4. Season & Simmer

Stir in diced tomatoes, Italian seasoning, paprika, chili flakes, salt, and black pepper.

Mix well and let it simmer for about 5 minutes so the flavors blend together.

5. Finish & Serve

Taste and adjust seasoning if needed.

Garnish with fresh parsley or cilantro.

Optional: sprinkle with shredded cheese before serving.
