🥩 Ingredients:
1 lb (453 g) beef sirloin, thinly sliced
1 bell pepper, diced
1 onion, finely chopped
2 tsp seasoned salt (divided)
1 tsp black pepper
1 tsp garlic powder
2 tbsp olive oil (divided)
2 cups shredded cheddar cheese (or Mexican blend)
4 large flour tortillas
2 tbsp butter (for cooking quesadillas)
Optional toppings: sour cream, salsa, guacamole, jalapeños
👩🍳 Method:
1. Season the Steak
In a bowl, toss the thinly sliced beef with 1 tsp seasoned salt, black pepper, and garlic powder.
2. Cook the Vegetables
Heat 1 tbsp olive oil in a skillet over medium heat.
Add diced bell pepper and onion. Cook until softened (about 4–5 minutes). Remove and set aside.
3. Cook the Steak
In the same skillet, add 1 tbsp olive oil.
Sear the steak slices until browned and cooked through (about 4–6 minutes).
Return the cooked peppers and onions to the skillet, mix well, and remove from heat.
4. Assemble the Quesadillas
Heat a clean skillet over medium-low heat and melt a little butter.
Place one tortilla in the pan.
Add a layer of shredded cheese, then spoon the steak mixture evenly, and top with more cheese.
Place another tortilla on top.
5. Cook Until Golden
Cook for 2–3 minutes on each side until golden brown and the cheese has melted.
Repeat with remaining tortillas.
6. Serve
Cut into wedges and serve hot with sour cream, salsa, and guacamole.
