Fresh Slaw with Tangy Peanut Dressing and Tofu Crunch


Ingredients: 

For the Slaw: 

- 2 cups shredded cabbage (red or green) 

- 1 cup shredded carrots 

- 1/4 cup chopped cilantro 

- 1/4 cup sliced green onions 

- 1/4 cup chopped peanuts (optional) 

For the Tofu: 

- 1 block firm tofu, pressed and cubed 

- 2 tablespoons soy sauce 

- 1 tablespoon cornstarch 

For the Peanut Dressing: 

- 2 tablespoons peanut butter 

- 1 tablespoon soy sauce 

- 1 tablespoon lime juice 

- 1 teaspoon maple syrup 

- 2–3 tablespoons water 

Directions: 

1. Preheat oven to 400°F (200°C). Toss tofu cubes with soy sauce and cornstarch, then bake for 20–25 minutes until crispy. 

2. In a large bowl, combine shredded cabbage, carrots, cilantro, and green onions. 

3. Whisk together peanut butter, soy sauce, lime juice, maple syrup, and water to make the dressing. 

4. Toss the slaw with the dressing and top with crispy tofu and chopped peanuts. Serve immediately.
