☑️Ingredients:
1 lb (450 g) ground beef 🍖
1 tbsp olive oil 🧴
1 medium onion, finely chopped 🧅
1 bell pepper, diced (any color) 🫑
1 medium carrot, grated 🥕
1 small zucchini, diced (optional) 🥒
2 cloves garlic, minced 🧄
1 tsp paprika
1 tsp cumin
1 tsp chili powder (optional for spice) 🌶️
Salt & black pepper, to taste 🧂
1 cup shredded cheddar or mozzarella cheese 🧀
4 large flour tortillas 🌯
2 tbsp fresh parsley or cilantro, chopped 🌿
Optional: sour cream, salsa, or hot sauce for serving
☑️Method:
1. Cook the beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
2. Add veggies: Stir in onion, bell pepper, carrot, zucchini, and garlic. Cook for about 5–7 minutes until vegetables soften.
3. Season: Add paprika, cumin, chili powder, salt, and pepper. Mix well and cook for another 2–3 minutes so the flavors blend.
4. Add cheese: Remove the skillet from heat and stir in the shredded cheese until melted and combined. Sprinkle in fresh parsley or cilantro.
5. Assemble wraps: Warm tortillas slightly, then place a generous portion of the beef & veggie mixture in the center of each.
6. Roll & serve: Fold the sides, roll tightly into a wrap, and serve warm. You can also toast the wrap in a dry pan for extra crispness.
